Bozal Tobasiche Mezcal is a 100% agave mezcal made from wild Tobasiche agave (a member of the Agave karwinskii family) harvested in the highlands of Río de Ejutla, Oaxaca. The agave, which takes 12–13 years to mature, is cooked in earthen pits, crushed, fermented with natural yeasts, and double-distilled in copper pot stills using traditional artisanal methods, yielding a mezcal with herbaceous, cedar-like, and mineral notes.
