Empress 1908 Indigo Gin is a small-batch gin produced by Victoria Distillers in Victoria, British Columbia, Canada, named in honor of the historic Empress Hotel. It is distilled with a blend of botanicals including juniper, coriander, citrus peel, rose, and butterfly pea flower blossoms, which impart the gin's signature natural indigo-blue color; the hue shifts toward pink or violet when mixed with citrus-based mixers or tonic. The result is a smooth, juniper-forward gin with floral and citrus notes, well suited to classic cocktails such as gin and tonics or martinis.
