Palenqueros Baltazar Cruz Sierra Negra is a single-palenque, 100% agave mezcal crafted by mezcalero Baltazar Cruz in San Luis del Río, Oaxaca, using wild-harvested Sierra Negra agave. The agave is cooked in an earthen pit oven, crushed with a mule-drawn tahona, fermented for four days with wild yeast, and distilled in a 300-liter copper pot still, bottled at still strength (around 51% ABV). Part of the Palenqueros series (a La Maison & Velier project) spotlighting individual Oaxacan mezcaleros and rare agave varieties.
