Bozal Ensamble Mezcal is an artisanal Oaxacan mezcal blending three agave varieties—cultivated Espadín with wild-harvested Barril and Mexicano. Produced under NOM 472, the piñas are roasted in earthen pit ovens, crushed via horse-drawn tahona wheel, and fermented in open-air wood tanks, yielding a lightly smoky mezcal with herbaceous, citrus, and floral notes.
