Xicaru Pechuga Mole Mezcal is a handcrafted mezcal from Matatlán, Oaxaca, made from 100% espadin maguey cooked in an underground conical stone oven, tahona-mashed, naturally fermented in open-air pine vats, and double distilled in copper alembic stills. For the final distillation, a whole dressed chicken and house-made mole negro (Oaxacan chocolate and chili sauce) are added, in the traditional "pechuga" style, yielding a rich, savory-sweet, smoky spirit bottled at 92 proof.
