Fósforo Tobalá Penca is a small-batch mezcal made by mezcalero Aarón Alva Sánchez in San Nicolás Huajuapan, Puebla, from wild Tobalá agave (Agave potatorum) grown 8-15 years. The cooked, fermented agave is double-distilled in copper pots, then this unique release is aged for up to three months in small glass carboys alongside a cooked agave penca (leaf) slice, imparting a complex, savory character. Bottled at 43% ABV.
