Ilegal Mezcal Joven is an unaged (joven) mezcal produced by Ilegal Mezcal in Santiago Matatlán, Oaxaca, Mexico, using 100% Espadín agave. The agave piñas are roasted in earthen pits, crushed with a traditional tahona stone mill, naturally fermented, and double-distilled in copper stills, yielding a smoky, agave-forward spirit with notes of tropical fruit, green apple, citrus and white pepper. Bottled at 80 proof (40% ABV), it is versatile for sipping neat or in cocktails.
