Mezcal Unión El Viejo is a joven (unaged) mezcal crafted by artisanal maestros mezcaleros in the Sierra of Oaxaca, Mexico, from a blend of wild and semi-wild agave species (including Espadín along with rarer varieties such as Cirial, Barril or Tobalá depending on harvest). The agave piñas are traditionally roasted in earthen pits lined with hot river stones, giving the spirit a complex, earthy, smoky flavor profile with notes of roasted nuts and tropical fruit. "El Viejo" ("the old man") honors the elder Oaxacan mezcalero whose vision of unity among small producer families inspired the Mezcal Unión brand.
