Novo Fogo Organic Barrel-Aged Cachaça is a Brazilian sugarcane spirit pot-distilled from fresh-pressed, organically grown estate sugarcane and aged for two to three years in disassembled, sanded, and re-toasted American oak ex-bourbon barrels at Novo Fogo's zero-waste distillery in Brazil's Atlantic Rainforest. The tropical heat and humidity accelerate maturation, producing notes of banana bread, chocolate, cinnamon, coffee, and black pepper at 40% ABV.
