Palenqueros Onofre Ortiz Mexicano Mezcal is a single-palenque mezcal crafted by fifth-generation mezcalero Onofre Ortiz in Bramaderos, Miahuatlán, Oaxaca, Mexico, using wild Mexicano (Rhodacantha) agave. The agave is cooked in an earthen oven pit, hand-crushed with a wooden mallet, fermented for seven days with native yeast, and distilled in a 350-liter copper pot still. It is bottled at still strength, typically around 47.9% ABV.
