Paranubes is an artisanal aguardiente de caña (rum) produced by third-generation distiller José Luis Carrera in the cloud forest of the Sierra Mazateca, Oaxaca, Mexico. Made from wild, mesquite-bark-fermented, freshly pressed Criolla sugarcane juice and distilled in tiny batches (max ~85 liters/day), it reflects the terroir-driven, funky character of traditional Oaxacan cane spirits.
